Summer Broccoli Salad

Happy July!! I can't even believe that June has come and gone, but sure enough it has. With Independence Day this weekend, I thought I'd share a favorite side dish recipe with you, perfect for a picnic, grilling out, or just because. This light and simple dish is sure to be a favorite, and it takes no time to prepare! And with the heat of summer upon us, this summer broccoli salad is a cool and refreshing addition to any meal. 

  • What You'll Need
    • 2 heads fresh broccoli
    • 1/4 cup red onion, diced
    • 6 pieces of bacon
    • 3/4 cup raisins
    • 1/4 cup sunflower seeds
    • 1 cup mayonnaise
    • 1/2 cup white sugar
    • 2 TBSP white vinegar 


  • What You'll Do
    • Cook bacon and set aside to cool. Once cooled, crumble it.
    • Cut the broccoli into bite-size pieces and add to a large bowl. Dice the onions and add to the broccoli, along with the raisins, sunflower seeds, and crumbled bacon. 
    • In a separate bowl, combine the mayonnaise, sugar, and vinegar. Stir until smooth. Then pour it over the broccoli mixture. Toss until well combined. Let chill for about 30 minutes and then serve.
    • ***If preparing ahead of time, don't put the dressing on until closer to serving time.
