Lemon Honey Chicken + Garlic Parmesan Roasted Green Beans

Happy Monday! Last weekend we whipped up this scrumptious meal to enjoy, and it turned out so well that I wanted to share the recipes with you. It's light and fresh, which is perfect for the warmer days of spring. And it involves little time in the kitchen, making it the perfect meal to make with your family, then head outside for those last, precious hours of sunlight. 

Before last Saturday, I had never tried roasting green beans, but I'm so glad I just gave it a shot. They are SO good, and it might be my favorite way to eat them. Add some seasoning (hello, garlic salt!) and throw on some freshly grated parmesan, and you have some out-of-this-world beans to crunch into at dinner! Bon appétit! 


We paired our lemon chicken and roasted green beans with brown rice. The trio made for a scrumptious and filling meal. And you'll feel so healthy for eating it, that you might just take a drive to your local ice cream shop for dessert ;)


L E M O N   H O N E Y   C H I C K E N
  • What You'll Need
    • 4 thin chicken breasts
    • 4 lemons (two for slicing; two for juicing)
    • 1/2 cup lemon juice
    • 1/3 cup all-purpose flour
    • 3 TBSP butter
    • 2 TBSP Honey
    • Salt & pepper
  • What You'll Do
    • Salt and pepper the chicken breasts. Then dredge both sides into the all-purpose flour, covering the chicken entirely. Shake off the excess.
    • Melt 2 TBSP butter in a hot skillet. Add the chicken and cook until it is crispy, brown on all sides. 
    • Transfer the chicken breasts to a plate. 
    • Now add 1/4 cup lemon juice to the pan. Stir up the brown bits, then add the lemon slices and let caramelize. 
    • Move the lemons out of the skillet and layer on top of the chicken.
    • Add the remaining tablespoon of butter to the skillet, along with the honey.
    • Stir until simmering, then drizzle over top of the chicken.

  • What You'll Need
    • Fresh green beans
    • Garlic Salt
    • Pepper
    • Olive Oil
    • Block of parmesan cheese
  • What You'll Do
    • Preheat the oven to 400°. While the oven is preheating, snap and wash all of the green beans. 
    • Line a baking sheet with tin foil. Spread the beans out over the sheet and drizzle with olive oil. Toss with your hands.
    • Sprinkle garlic salt and pepper over the beans.
    • Cook for 20 minutes or until crisp.
    • Grate the parmesan over the warm beans.
