Lemon Poppyseed French Toast

I told you I had an obsession with anything lemon poppyseed. Last Friday, while making a list for the grocery store, an idea dawned on me to make french toast for our lazy Saturday morning breakfast. Better than that, I would make it lemon poppyseed. And just like that, husband and I were munching on the best french toast creation and a side of bacon while enjoying mimosas. My kind of Saturday breakfast! 



Best parts of the recipe include the small ingredients list and the little bit of time involved with making a homemade breakfast. You could be an over achiever and make your own bread, but when your goal is to have a relaxing Saturday, store bought from the deli works just fine! 

Fresh zested lemon smells heavenly. It will leave your kitchen smelling like summer arrived, and it's the best!

Making the french toast truly is simple. Even half awake from sleeping in and lounging on a weekend morning won't cause you to mess this up ;)

  • What You'll Need
    • Loaf of bread
    • 3 eggs
    • Juice of 1/2 lemon
    • Zest of 1 lemon
    • 1 TSP poppyseeds

  • What You'll Do
    • In a bowl, whisk together the eggs. 
    • Zest the lemon then add it to the eggs. 
    • Next add the poppyseeds. Stir well.
    • Lastly, you'll add the lemon juice. You could add more if you desire a stronger lemon taste.
    • Heat a skillet over medium heat. While it's heating, dip each piece of bread into the egg batter and coat thoroughly. 
    • Place on the skillet and cook until the sides have browned slightly. 
    • Served with maple syrup and powdered sugar. 





The lemon poppyseed french toast will be ready in no time! And you're going to love it! If you love fruit, I suggest throwing in some blueberries. And if you want to add a little extra something, then make my lemon glaze and drizzle it overtop!
