Springtime Blueberry Lemon Tart

Happy first day of March! Goodness gracious, I can't believe we are starting the third month of the year already, but I am so very thrilled for two things this month...1. Daylight Savings; can I get an amen for longer days? 2. The start of spring. And in honor of these two wonderful things, I wanted to whip up a dessert that would be perfect for this new season upon us. 

Besides, a cream-cheese tart is my favorite kind of dessert. So I loved the excuse to turn a classic tart into a recipe that embodies springtime. And what better way than to use lemon + blueberries + a flaky crust? So, so, so good. 


  • What You'll Need
    • 1 puff pastry sheet
    • 1 egg, beaten
    • 8 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 1/2 cup lemon curd
    • 2 TBSP heavy whipping cream 
    • 1 cup blueberries
    • 1/4 - 1/2 cup mixed berry preserves

  • What You'll Do
    • Let one puff pastry sheet thaw. Once thawed, preheat oven to 425°.
    • Lay out some parchment paper on the counter and roll out the puff pastry sheet. You want it to fit in a XxX baking sheet. Transfer the rolled out sheet + parchment paper to the baking sheet. Roll all four sides in and crimp with fingers to create edges.
    • Poke holes in the pastry with a fork. Then spread the beaten egg wash thinly over the entire pastry, edges included.
    • Bake for 15-20 minutes. 
    • The pastry will puff out; gently press it back down, until flat, with a spatula. Let cool.
    • In a bowl, combine the softened cream cheese + sugar. Then add the heavy whipping cream. Next fold in the lemon curd. Mix until everything is smooth.
    • Add the lemon cream cheese mixture into the puff pastry, spread out evenly.
    • Top with blueberries.
    • Lastly, microwave the mixed berry preserves for about 20-30 seconds, until liquid.
    • Drizzle over the pastry. 


I hope you enjoy this as much as we have. I've never been big on eating the sweets I make; I really just love the baking part of it. But, I'm enjoying this tart and all of its goodness.
