Gourmet Edible Cookie Dough Bites

I think happiness can be found in a little indulgence every now and then. Amen? I love to find new sweet treats to enjoy that will be decadent and perfect in a small size. One thing I love is cookie dough, but we all know that we shouldn't be nibbling on raw cookie dough. So when husband mentioned that we could use our sous vide to pasteurize eggs, making them safe to eat before being cooked, I was intrigued to try my hand at edible cookie dough. And not just any cookie dough, I wanted something a bit extravagant and rich.

A little ingredient brainstorming later, I have three different flavors of gourmet edible cookie dough. I think these bites are perfect for serving at a party or girls' night, a little sweet treat after dinner, or for movie night. However you enjoy them, I think you're going to love them! 

Let me introduce you to... 
Double Chocolate Chunk, a classic with two different types of chocolate.
Mint Chocolate Fudge, a truffle-like dough bite with the sweetest hint of mint.
Sea Salt and Caramel, the perfect sweet + salty combination with a little crunch.


  • What You'll Need
    • 2 sticks unsalted butter, softened
    • 1 1/4 cup brown sugar
    • 1/2 cup granulated sugar
    • 2 TSP vanilla extract
    • 2 eggs, pasteurized
    • 3 cups all-purpose flour
    • 1 1/2 TSP sea salt
    • 1/3 semi-sweet chocolate chunks
    • 1/3 dark chocolate chunks
    • 2/3 cup mint dark chocolate
    • 2/3 cup caramel dark chocolate
    • 1/4 cup cocoa powder
    • 2 TBSP caramel sauce (plus some for drizzle)
    • Kosher coarse salt for sprinkling 

  • What You'll Do
    • Start by pasteurizing the eggs. Set the sous vide to 134.6°F; when the water reaches temperature, add the eggs. Let the eggs cook for two hours. After the two hours have passed, remove the eggs and place in a bowl with cold water and ice for  10 minutes. 
    • When the eggs are close to done, preheat the oven to 350°. 
    • On a parchment paper-lined sheet pan, evenly spread out the flour. Cook it for 7 minutes. then let it cool. 
    • In a bowl, cream the butter and sugars together. Mix in the vanilla extract and the eggs.
    • Now add the cooked flour and salt. Mix until well combined.
    • Evenly divide the dough into thirds, placing each third into different bowls. 
    • Cut the chocolate bars into small chunks and set aside.
      • Double Chocolate Chunk Dough
        • Stir in the chunks of semi-sweet and dark chocolate chunks.
        • Use a mellon baller to make bites.
      • Mint Chocolate Fudge Dough
        • Stir in the cocoa powder. Make sure it is well mixed in.
        • Mix in the chunks of mint dark chocolate chunks.
        • Use a mellon baller to make bites.
      • Sea Salt and Caramel Dough
        • Stir in the caramel sauce well.
        • Mix in the caramel dark chocolate chunks.
        • Use a mellon baller to make bites.
        • Drizzle with caramel sauce and sprinkle coarse salt over top just before serving.

**You can make these ahead of time and refrigerate before serving.
